Lactose- and gluten-free apple rings in beer batter with vanilla mousse

Chef Michael from the Alte Krone recommends this time lactose- and gluten-free apple rings in beer batter with vanilla mousse.


Michael has been the chef at the Alte Krone for years and have specialized on fish dishes in lactose- and gluten-free cuisine. The following recommendation is vegetarian, gluten-free and easy for home cooks also. Have fun in the with the recipe, wishes chef Michael and Traveltalk staff.

Lactose- and gluten-free apple rings in beer batter with vanilla mousse
3 Granny Smith apples
150g buckwheat flour
100ml almond milk
3 eggs
1 teaspoon baking powder / hartshorn salt
0.1l “Bock” beer, for example “Steinbock” from the Allgäuer Brauhaus
1-2 teaspoons “Bros”-honey or forest honey

Vanilla mousse
200ml almond milk
20g of birchen sugar
2 Blt gelatin
Core of a vanilla pod
Sieve

Preparation

Remove the core from the apples and cut into approximately 7mm thick slices and put them into lemon water…From the ingredients of buckwheat flour, almond milk, eggs, baking powder and honey make a smooth batter and in the end add the beer...Now dry the apple slices slightly and pull it through the batter and fry them in a pan or deep-fry until they are golden brown...

For the vanilla mousse, insert the gelatin in cold water, then cut the vanilla pod in half and scrape out, then warm up with the almond milk. Add the sugar and then mix the gelatin completely in the warm milk.

Dispense by a sieve and let cool down, gelatin should start easily to bind...

Sprinkle now cinnamon and sugar or powdered sugar on the apple fritters and just spray the mousse…
