Fried egg with truffles on potato pancake

Fried egg with truffles on potato pancake


400 g potatoes
1 egg (for the pancake)
4 eggs (for the fried eggs)
35g of truffles (fresh black)
Pepper (from the mill)
Oil or butter (for frying)
1 tablespoon butter (for the fried eggs)


Peel potatoes, grate, salt and wring out little bit. Then mix with the eggs and flavour with salt and pepper. Heat oil or butter in a large frying pan, put in 4 pancakes with a spoon and press them slightly flat. Fry on both sides until they are golden yellow, put on kitchen paper and keep warm in a hot oven at 70 °C. Heat butter in a pan, gently break 4 eggs and fry until they ready. Brush truffles thoroughly and cut into thin slices. Display a pancake on a preheated plate, put a fried egg on it and serve with garnished slices of truffle.
